Stuffed Mushrooms


Hello Dear Reader,

Many thanks for your good wishes. I've never had a back problem before and simply put one foot on the ground and something 'popped' in a muscle and it took forty eight hours for it to 'free up' again. 

Tonight, I'm on form again and here I am saving a quid by using up left overs. I had some French blue cheese, mushrooms and bread. Stuffed mushrooms! You could use any blue cheese, however, it's expensive so this might be a treat. The cheese was bought when we were on holiday and it's about to go out of date so I'm using it up.


Remove the stalks and peel the mushrooms (or don't...you are going to eat them) - mush your blue cheese in a bowl until soft and then using a teaspoon, whilst supporting the mushroom in the palm of your hand, gently press the cheese into the mushroom.


Dip in egg and then bread crumbs until they are all covered. Press the breadcrumbs on to make them stick and balance a few more on top for crispiness.


Shallow fry in very hot oil. Turn with two spoons after a few minutes.


Eat with salad. They are rich and calorie laden so don't have too many!


The cheese and the bread was used up, as was some hummus, which we've been eating with our lunch all week.


I'm an 80's kind of girl and I almost wanted some Grover Washington in the back ground with a spritzer on the side! This was a popular 80's bistro starter. If you have any left over pate, this also makes a good stuffing.

    Good to see you up and running again. Dinner looks wonderful , been a leftover week here as well I was wondering what you did with the stalks. Myself I keep them back and make a mushroom soup out of them when done blend it and add a little creme Fraiche or a spot of milk/cream anything like that left over, and then like you would make croutons out of any leftover bread.
    I feel all inspired now and its too late to go a cooking lol

    Regarding the test card, mum would take me with her when she went cleaning when I was small and I can well remember the black and white test card on the TV that belonged to the house owners. The old man would turn it on especially so that I could watch 'watch with mother' and it felt like an eternity until the test card would disappear to be replaced by Trumpton.

  11. I've never tried mushrooms cooked this way. In the past, I've stuffed them with sausage, the minced stems and cheese and baked them. These look great!

  13. Tried this yesterday using chorizo and cheddar blitzed in the food processor. Was lush but couldn't get my breadcrumbs to stick to the smooth cap of the mushroom so ended up with something a bit omelette-esque. Was lush though and there's some left over to be heated up for breakfast.
